Covarrubias Runs Liberal to an International Pancake Day Win

For the first time since 2015, Liberal wins the International Pancake Day Race. Gaby Covarrubias ran the Liberal leg of the 415 yard S shaped curve in 1:08.85. That time edged Olney’s Katie Godof and her time of 1:11.4. Liberal leads the series 38-29 with two no contests. The Olney leg of the race was run at 5:55 a.m. central time. The race was run at 11:55 a.m. with sunny skies and a temperature of 46 degrees. The win was blowing in the face of the racers out of the south at about 25 miles per hour.
Covarrubias is a 22 year old LPN at Southwest Medical Center and a second year nursing student at Seward County Community College. She is a lifelong Liberal resident. Her son Cesar is 3 and ran in the children’s races. Her husband Cesar works at Latshaw Drilling Company. This is the first time Covarrubias has run in the race. Sarahy Esquivel came in second. She is a 22 year old secretary at CrossFit Fracas. Allyson Nondorf came in third. She is a 20 year old student at Kansas State University.
There were eight racers in this year’s race in Liberal. The other racers were Lindsay Claus, Elena Calleja, Minerba Lopez, Tessy Barnett, and Kaitlyn Ralston.
